In my last post, I shared pictures and ideas for a Summer Fiesta, a fun and colourful way to celebrate the summer season. I promised I would share the summer fruit flan pictured in that post, so here it is! This dessert is always a hit with guests and it’s relatively easy to make. Given that we have access to so many wonderful types of fruit in the summer, you can be creative with the types of fruits you want to use to top off this dessert.
Dorothy’s Summer Fruit Flan:
1/2 cup butter
1 cup flour
1/4 cup icing sugar
Mix well with a pastry blender and press into the bottom of a springform pan. Bake at 350 degrees for 15 minutes
Let cool while you prepare the filling.
Cream Cheese filling:
8 ounces cream cheese (250 gr.)
1/3 cup sugar
1 cup whip cream, whipped with 1 tsp. vanilla & 1/2 tsp. lemon juice
Mix together well and spread over top of the cooled crust.
Using any combination of fresh fruit, cover the cake entirely with fruit. I generally use strawberries, raspberries, blueberries, but blackberries, peaches, kiwis, nectarines, etc. also work well.
Use 1/2 cup orange or apple juice & 1/2 cup pineapple juice
Mix 1 Tbsp. cornstarch with 1/4 cup sugar together and then mix with the juices
Heat until it thickens. Cool.
Pour glaze over fruit flan. Refrigerate until ready to serve.
Whip up some extra whip cream if you want to be extra decadent! Enjoy!
