It’s summer and the days are long and hopefully hot. Make your summertime entertaining easy by enjoying the outdoors, especially for mealtimes. There are so many wonderful dishes that you can make that won’t take up too much of your time and require minimum preparation. One of our favourites is barbequed pork tenderloin. Marinate your pork loin well in advance to keep it moist and tender once it’s cooked. Put together an assortment of veggies to accompany your meal and you’ve got yourself some summer sizzle!
2 pork loins (aprox. 1 lb each)
Ingredients for marinade:
1/3 cup olive oil
1/4 cup soy sauce
2 Tbsp. Oyster sauce
2 Tbsp. minced garlic
1/4 cup brown sugar
1 tsp. parsley flakes
1/2 tsp. pepper
Mix marinade together and pour over pork loins. Cover and refrigerate for at least 4-6 hours.
Remove from fridge about 20-30 minutes prior to cooking. Barbeque for aproximately 15 to 20 minutes turning every 2 minutes. Continue to baste with remaining marinade.
A platter of roasted vegetables is easy to prepare and looks so colourful for a summer meal. Use any combination of fresh vegetables: carrots, onions, garlic, peppers, zucchini, snap peas, mushrooms, etc. Depending on how many vegetables you prepare, use about 1/4 to 1/2 cup of olive oil mixed with salt, pepper, 1/2 tsp. pasta seasoning, 1 teaspoon of dried parsley. Mix together and coat the vegetables. Bake in a 400-425 degree oven for 20-30 minutes depending on your own preference. Serve with your pork loin roast, rice or potato, and you are ready for a delicious summer meal!

1 oz. coconut rum, 1 oz. vodka & 1 oz. Peach Schnapps. Pour over ice and add 2 oz. orange juice, 2 oz. pineapple juice and 3 oz. sparkling orange Sanpellegrino. Delicious and refreshing!
