When the Beach Boys released their album “Endless Summer” on June 24th, 1974, they had no idea that this compilation would soon hit the #1 spot and re-launch the fame of their group throughout North America. Perhaps the sentiment of the album’s title resonates with all of us, as we are reluctant to see summer go; yes, in some way, we all wish for an endless summer.
It’s September and most of us are scrambling to readjust to the “back-to-school” schedules that inevitably affect us even if we aren’t attending school. This past week meant new routines for our family as 3 of us (myself included) were back at school. BUT… thankfully, the weather has been great and we are still trying to convince ourselves that we can hang on a bit longer to summer. This week we hosted a pool party for Jenny’s gang of friends from the Canadian College of Performing Arts who arrived from all parts of Canada to begin their training again at the college. An afternoon/evening of poolside fun was enough to convince all of us that summer was still here to stay for a few more weeks at least.
Caramel Apple dip – see photos below
1 – 8 ounce pkg. cream cheese (room temperature)
1 – 12 ounce container of Cool Whip (slightly thawed)
1 jar caramel sauce (16 to 20 oz.) I used Bernard Callebaut caramel sauce
1 ½ cups Skor bits
½ cup grated dark chocolate
Apples – sliced
Mix cream cheese and cool whip together. Spread in an 8×10 pan. Cover with caramel sauce.
Sprinkle Skor bits on top. Sprinkle grated chocolate over the spread. Refrigerate until ready to serve.
This caramel dip is always a crowd-pleaser and a great fall dessert since we have apples in abundance. Hope you enjoy the last few weeks of summer. It’s not over yet!
