Spaetzle…a German treat

My parents were both German, so I grew up enjoying a number of tasty dishes that were part of their heritage and happily, my mom passed along many of those recipes to me. One of our family favourites was Spaetzle, a homemade noodle that makes a wonderful accompaniment to almost any meal. Spaetzle literally means “little sparrow” and is similar to the type of noodle found in other parts of Europe, such as Hungary, Switzerland and Austria. The ingredients are basic (eggs, milk, flour & salt) and it’s relatively easy to make. Pick up a Spaetzle maker at any kitchen specialty store and you’re ready to go!


Here’s the basic recipe for Spaetzle that you can alter to your taste. Some people like more salt and others prefer to use water rather than milk. You might also wish to add pepper or other spices to the batter, but here’s the version I use:


  • 4 cups flour
  • 5-6 eggs
  • 1 tsp. salt
  • 1 to 1 1/2 cups milk (I use 1%)

I use my mixer to blend this all together. Check for consistency – the batter should be fairly thick. The real test is once you put it through the Spaeztle maker – the batter should drop through in small chunks (maybe an inch in length). Have your pot of boiling water ready to go before you start putting your batter in the Spaeztle maker. Use a gentle, slow motion to work the batter through. Allow the noodles to boil in the water until they float on top (3-4 minutes). Remove from water and drain in a collander. You will need to repeat this process several times until you have used all the batter. You can either serve the noodles straight from the boiling water or brown them up with butter in a frying pan.
